For over three decades, Grant "Gutsy" Shorland has been diving the pristine waters around Mallacoota, harvesting the finest abalone from the rocky reefs that define our coastline. His intimate knowledge of these waters, gained through years of early-morning dives and battling the elements, forms the foundation of everything we do at Scallywags.
Born and raised in this coastal paradise, Gutsy's connection to the sea runs deeper than most. He learned to dive from his father — a tradition of working with nature, not against it. This respect for the ocean and its bounty is woven into every dish we serve.
Scallywags has become his land-based vessel for bringing the authentic taste of Mallacoota's waters to locals and visitors alike. Every menu item reflects his understanding of seasonality, sustainability, and the simple truth that the freshest seafood needs little more than skilled hands and respect for tradition.
Today, you'll often find Gutsy in the bar, sharing stories with guests — or cruising around town in the limo with the Scallywags flags flying. His weathered hands and salt-stained tales are as much a part of Scallywags as the nautical décor and waterfront views.
When he's not serving up fresh seafood, you'll find Gutsy out on the water with his boat hire business, Mallacoota Barbie Boats. His intimate knowledge of these pristine waterways makes him the perfect guide for exploring Mallacoota's hidden coves and fishing spots.
And, true to the spirit of any good pirate, Gutsy has a well-known love for a fine rum — he's always happy to share one with friends and visitors, a fitting toast to the pirate spirit that brought Scallywags to life.

Weathered timber beams, rope details, and brass fittings create an atmosphere that's both elegant and authentically nautical. The design pays homage to Mallacoota's maritime heritage without falling into theme park territory.
Our waterfront location offers panoramic views across the inlet, where fishing boats bob at anchor and pelicans patrol the shallows. As the sun sets behind the headland, the restaurant transforms with warm lighting that reflects off the water, creating a magical dining atmosphere.
The fit-out includes reclaimed timber from old fishing boats, antique maritime instruments, and local artwork celebrating our coastal culture. Every detail has been chosen to enhance the storytelling experience while maintaining the comfort expected in fine dining.
